Chilaquiles Rojos - Tijuana Sanctuary Recipe
Chilaquiles Rojos is a popular traditional Mexican breakfast made with crispy tortillas smothered in a tomato based red chile sauce. Serve with eggs and your choice of cheese and enjoy!
Ingredients
- Tortillas
- Onion, chopped
- Tomato, chopped
- Guajillo pepper
- Garlic
- Water
- Cooking oil
Directions
- Cut the tortillas into triangles for tortilla chips
- Heat oil in a skillet over medium/high heat
- Immediately add tortilla pieces and wait for them to brown. When brown, remove from the oil and place on paper towels to drain
- For the sauce, add the chopped tomato, onion, garlic and chili into a blender with a little water and blend together
- Place the fried tortillas back in the skillet along with the blended red sauce
- Add salt to taste, mix all together
- Enjoy with cheese, eggs, cream or beans
